Note: Waiting List Information: In addtion to the above reservation times, we do have a waiting list that begins at 5:30pm daily. You must arrive in person to have your name placed on our waiting list. Our waiting list is on a first come, first served basis. |

Why does Palazzio use the teamwork system of service? |
|
This is a special type of service where everyone on our staff is ready and willing to serve you. You need not look for the one waiter who originally took your order. Everyone is available to service your dining needs. You will never have to search for that "missing" waiter anymore. |

What can you tell us about the owner of Palazzio? |
|
Owner Ken Boxer has lived in Santa Barbara, California almost his entire life and never expected to be, nor had he ever planned to be, in the restaurant business. Ken was educated at the University of California at Santa Barbara and needed "extra" money to assist him in the Master’s program of Communication Studies. Having never worked in a restaurant prior to 1985, Ken began working in a local café, soon becoming the General Manager. After several years learning his craft, Ken began to believe he could open a restaurant for himself. Consequently, on February 19, 1993, Ken had the vision of Palazzio: A place where customers would receive legendary service and exceptional food in both quality and value. |

Does Palazzio have a credo among its staff? |

Yes we do. We are trained to remember this one quote: "Let’s not be 1000 percent better than the competition; rather, let’s strive to be one percent better in 1000 different little ways." |

Is it true that Palazzio customers sing while dining? |
|
Yes, but only on Saturday nights. Since opening in 1993, our customers and the entire Palazzio staff join together with a glass of Italian Merlot every Saturday night (sometime between the hours of 8pm and 10pm) and sing along with Dean Martin singing "That’s Amore." It is fun..it is spontaneous..it is memorable. |

What is meant by the phrase "Wine on the honor system?" |
|
At Palazzio we have several rather large wine decanters located throughout the dining room. Our guests are encouraged to walk around the dining room and serve themselves a glass of our Italian Merlot, or Italian Chardonnay, or Italian Pinot Grigio. In other words, you may serve yourself glasses of Italian wines throughout the dining room. Keeping track of the total number of wine glasses consumed is fun.
Each table has crayons that customers may use to place a mark on the table cover. Each mark represents one wine glass consumed.
It’s that simple. At the end of your meal, one of our team players will ask you how many wines you had. Give him or her the total; that’s what you will be charged. |

Is it true that you have a replica of the Sistine Chapel at your downtown location? |

Yes. Palazzio is the only restaurant in the United States that has a replica of the Sistine Chapel on its ceiling. (See related media article). Artist Irene Roderick spent eight months painting the ceiling, a total of 295 hours. This work of hers is truly a masterpiece. CNN, ABC, NBC, and several local and national publications have presented our ceiling to a very large audience. |

Is Palazzio planning on expanding its concept to other cities? |
|
Yes. Currently, Palazzio is considering several different sites into which to expand as our second, third and fourth locations. At this time we are not prepared to disclose these locations. But as soon as we can, we will post the information here on our web site. Keep watching for it. |

How does one apply for a job at Palazzio? |
|
Click here for an application and click here for the questionnaire. We are always looking for quality individuals who are serious about their work. We hire people who have outstanding personalities, with outstanding references. While we have hired individuals having very little, if any, restaurant experience, that is the exception. Generally, we hire only people with at least three years of restaurant experience. |
